The sequel to Wild Beer's infamous mushroom beer - Breakfast of Champignons. This new recipe uses Chanterelle mushrooms (as opposed to penny buns) seasoned with white peppercorns and parsley. A bright acidity and tight sour bite sees the wild floral yeast dominate with additional white wine and gooseberry notes with very distant mushroom and parsley notes on the finish, with lingering toasted oak. Interesting doesn’t cover it, and not quite what you would expect!
One for the adventurous beer drinker.
